December 4: Cake!
I just came for the cake….
I love cake. I mean, how do you not love cake? When FloRida starts rapping about cake, visions of cake slices and yarn cakes swirl around my head, although I don’t think that’s what he means.
Cake yarns are hot this season, and we have several colorful options for you.
Dipinto
From Lang Yarns of Switzerland, this vibrantly colored merino blend is soft and luscious! Lang has a little pattern booklet filled with accessories to knit with Dipinto:
We recently knit the short rowed Dragon Shawl in Dipinto and it turned out really nice!
Cassowary
From the Queensland Collection, this merino blend works in soft gradient striping shades. These three patterns featuring Cassowary are included in one leaflet, free with purchase of the yarn.
Â
Nebula
From Berroco, this single-spun sport weight yarn features long-color repeats that create gorgeous variegated fabrics. Â Berroco has several 1-2 skeins designs to knit and crochet featuring Nebula:
And I have two free patterns to share with you, also featuring Nebula! Simply click on the photos below to get your free pattern.
But wait, there’s more! Today IÂ have two prizes to give away.
One lucky person will win a skein of Cassowary, along with a one skein socks/cowl pattern to knit.
Another lucky person will win a skein of Nebula, along with the one skein Trelawny shawl pattern.
Will you be one of the lucky winners? Simply comment with which yarn & color you’d like to win. You can see the Cassowary colors here, Nebula colors here.
And if all of this talk about cake has made you hungry, I have a couple of easy and tasty cake recipes to share with you today.
Easy Pineapple Cake (a family favorite)
- 1 ½ cups sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 cups crushed pineapple with juice
- 1 tsp vanilla
Grease and flour a 13 x 9 baking dish. Preheat oven to 325Âş. Mix all ingredients in large bowl. Pour into prepared pan. Sprinkle batter with brown sugar and pecans.
Note on recipe from my mother: I never measure either of these. After all, is there such a thing as too much brown sugar and pecans? If I had to guess on the brown sugar, I’d say maybe 1/3 C packed – maybe more but probably not as much as 1/2 C. Sheesh! I don’t know. Lots is good.
Bake 45 minutes at 325Âş
ICING
- 1 cup sugar
- 1 stick butter
- 1 small can of milnot
- 1 teaspoon vanilla
Bring to boil. Boil 5 minutes only. Pour over warm cake. Eat! It is also good served warm with whipped cream.
Easiest Cake Ever!
- 1 Devil’s Food Cake Mix -or- Spice Cake Mix
- 1 can Cherry Pie Filling -or- Apple Pie Filling
Grease and flour a bundt cake pan. Preheat oven to 350Âş. Combine the cake mix only (no other ingredients) with the can of pie filling, stirring by hand until cake mix is moistened. Pour into bundt pan and make for 45-50 minutes.
For chocloate/cherry cake, make a chocolate drizzle as follows:
- 1 ½ cups powdered sugar
- ÂĽ cup cocoa
- ÂĽ cup butter, softened
- 5-6 tablespoons milk
Mix all ingredients together and drizzle on warm cake.
For spice/apple cake, dust with powdered sugar when cool.
