A delicious recipe from knitter Tina Stone
- ½ cup butter, softened
- ½ cup shortening
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- ¼ teaspoon salt
- 3 egg yolks
- ½ teaspoon vanilla
- 2 cups all-purpose flour
Preheat oven to 300º
In a large mixing bowl, cream butter and shortening using mixer on medium speed for 30 seconds.
Add sugar, baking soda, cream of tartar, and salt. Beat until combined.
Beat in egg yolks and vanilla.
Add flour and stir by hand until blended.
Shape approximately 1 tablespoon of dough into 1-inch balls or use a #60 cookie scoop. Place 2 inches apart on a parchment lined cookie sheet.
Bake for 20 minutes, or until tops are slightly cracked and sides are set. Do not let edges brown. Bake one sheet at a time. Transfer cookies to wire rack too cool.
Makes about 4 dozen addictive cookies.
