Instructions
Preheat oven to 450º
Combine all crust ingredients, mix well and press into a 9″ pie plate. Bake 10 minutes, or until golden brown..
Wash and remove stems from strawberries, then slice in half.
In a large sauce pan, simmer 1 cup of strawberries with ½ cup water on medium low, until they begin to break down (about 5 minutes).
Blend sugar and cornstarch with ½ cup water. Stir into the strawberry glaze. Boil 2-4 minutes longer, stirring constantly until thickened. Add a few drops of red food coloring as desired. Set aside to cool.
Arrange uncooked strawberries in crust. Cover with strawberry glaze. Top with whipped cream. Refrigerate until serving.
Tips
For fresh whipped cream, whisk heavy cream on high until firm.
May also be served topped with Cool Whip.
